What is a New York Strip Steak?
The New York Strip Steak, which goes by many names such as New York Strip, Strip Steak, Kansas City Strip Steak, Delmonico Steak, Ambassador Steak, and Shell Steak, comes from the loin primal – specifically, the short loin subprimal that comes from the loin primal. The loin primal is situated below the backbone of the cow, and provides some of the most popular cuts of beef, including the tenderloin (and from this, the ever-so-popular filet mignon).
Fun fact: The New York Strip has origins dating back to the 18th century, where it was first introduced and gained popularity as a signature dish at Delmonico’s restaurant, a renowned steakhouse in New York City.
