What is the chuck roll?


The chuck roll is initially a large, boneless subprimal cut that comes from the chuck primal cut of the cow. Located between the ribs and backbone, the chuck roll is taken from the shoulder area, and contains moderately tough muscles. That’s why the roasts from this cut are ideal for slow-cooking to maximize tenderness, or ground. Here, we’ve opted to thinly-slice the chuck roll so that its rich, beefy flavor can be enjoyed without giving up tenderness!
